Happy Birthday Stewart! 6/27/2014

My first cake order of the year!  Super thrilled and excited to have built this cake for Mackenzie.  She asked for a cake not too rich or heavy and I think we nailed this together!  I haven't eaten a touch of sugar for about two months, so she helped taste the bases of the fillings to make sure I was on track with what she requested.  This is a yellow chiffon cake!  Which means it's light like an angel food cake, but a bit more flavorful being that they have egg yolks, among other things angel food cakes do not contain.

Here is a shot of the inside layering.  Raspberry and Mocha filling alternating rings, and each layer is alternating as well, so when consumed, she should be getting a bite of everything altogether.  Yum!
The outermost layer is whipped cream, which the cake will be frosted with.

It turned out to be a high cake (I don't believe in tossing cake just so there is less height).  Four cake layers, three layers of filling!  No simple syrup needed.  Cake will be plenty moist and delicious without it.

And here's the final product, a wonderful birthday cake for Stewart!  Frosted in whipped cream, garnished with fresh raspberries, and chocolate covered espresso beans on top.  The bottom which is a little difficult to see, I shaved some raspberry chocolate (found at the health food store) and created a flat scalloped border.  Hard to see, but this is not flat iced, I used a comb on the side.

Happy Birthday Curt! March 23rd, 2013

A wonderful returning customer ordered her husband this richly delicious cake!  Created with a raspberry cremeux, chocolate cake, and chocolate buttercream as well as a touch of raspberry preserves and fresh raspberries made this cake one of my personal favorites to eat!  (Yes...guilty, I ate the scraps!)  This cake was a delight to envision and the components took a couple days.  First cooking down raspberries, pushing through a chinois, cooking the raspberry cream and finally blending it into emulsion!

Ben's Birthday! March 1st, 2013

Vera has returned the favor for gifting a cake to her husband this year!  She approached me wanting a white cake and got much more than she anticipated.  This 6" cake had many components, all complementing each other wonderfully (in my opinion).  Top to bottom:  White cake, thin layer of chocolate ganache, almond-kirsch filling, white cake, thin layer of chocolate ganache, almond-kirsch filling, white cake, covered with Italian buttercream and finished with toasted almond slices and a dab of ganache for the top.

Catherine's Wedding Cupcakes! October 13th, 2012

Catherine chose carrot cake cupcakes with an orange cream cheese frosting decorated with an orange rose for half of her guests.  The other half would enjoy a white cake with orange cream cheese frosting with a burgundy rose to blend in nicely with her wedding colors and fall decor.

Carrying trays used just for the transport

The white cupcakes were decorated with a star tip

Cupcake stand provided by bride

Carrot cake cupcakes were decorated with a plain tip to also differentiate between the two varieties.

Candace's Bachelorette Lingerie Party July 28th, 2012

This peacock inspired cake was a fun and beautiful way to finish up the month!  A marbled cake with a raspberry bavarian filling.  Vanilla buttercream to ice and the lingerie is made out of gum paste, royal icing and was airbrushed.  The gum paste is hardened, a good keepsake if one so chooses.

Vera's 35th Birthday! July 16th, 2012.

Ben ordered his wife's cake for her 35th Birthday, how romantic!  She is a milk chocolate fan so I created a delightful twist to the chocolate lovers.  This is a chocolate cake with milk chocolate mousse filling, chocolate buttercream to encase, and a covering of milk chocolate ganache.  I was pleased to make this cake for a sweet new mom.  A wonderful treat my husband didn't even want to leave the house!
